Please help, there is a chef in the place I am working now, wants us to measure sauces, dressings in gram and kilograms, anyone can help?

Every substance will have a different weight to volume conversion factor. You can't calculate it unless you know the density or the specific gravity.

There is a water weight conversion page here:

But the above is only correct for water. In your case, since you probably cant find out the density of the sauces and dressings, you'll probably just need to weigh them.
