According to the Rec.Cooking.FAQ, vegetable oil has a density of 0.89 grams/milliliter.

1 gallon [US, liquid] = 3,785.4118 milliliter

3,785.4118 milliliter * 0.89 grams/milliliter = 3369.016502 grams

3369.016502 gram = 7.4274 pounds

So its about 7 1/2 pounds.
