can you define brix in sugar process. is it a unit for viscosity or a unit for density? what are the units that is related to brix. thanks  ???

Brix is a percent, though technically you would probably call it a unit of proportion.

1 brix = 1% sugar
20 brix =20% sugar
42 brix = 42% sugar
etc.
